It’s just after 8:30pm and I’ve finally had the chance to sit down. Ella is tucked away in bed, the dishes have been washed, and the water in the kettle is slowly coming to a boil; soon, my cup of green tea with lemon will be ready and patiently waiting for me. This is the moment I most look forward to at night.
No, I did not work out today (shame!!); however, let’s remember that there is more to a healthy lifestyle than just working out. Like what, you ask? Well, healthy eating, of course! Before we walked over to Lulu’s for our weekly grocery run, I found myself checking websites like http://www.theppk.com/recipes/all-recipes/?RecipeID=2059 and http://vegandad.blogspot.com/. I want to get into the habit of making weekly meals that are healthy, yummy, and most importantly, vegetarian! Things like Red Lentil Thai Chili (from PPK) and Crispy Cajun Chickpea Cakes (from Vegan Dad) sound like good and hearty options. I love to cook and bake; I especially like having that extra time on the weekends to do so. I want to get back into this groove of cooking healthy meals and having enough for the week. There’s nothing I dislike more than coming home from work and being too tired to cook. On those evenings, I find myself saying, “Oh hello, bread. I fancy you will make me some fine toast tonight!” Yeah…that’s not cool.
Tomorrow I have every intention of working out. In fact, I think I will go for a run in the morning. The weather here has been fantastic lately: warm enough to still wear a t-shirt and shorts, but cool enough to feel a breeze as your running shoes hit the soft cushion of the track.
I think it’s going to be a good weekend. 🙂
